I know that ash wednesday kicks off lent and that lent is supposed to be 40 days because Jesus spent 40 days and 40 nights in the desert by himself (where the devil tempted him 3 times). I know Easter Sunday is the end of lent, so where did the 7 extra days come from? When were they added? Do they represent anything?

Sundays are typically not counted as Lenten days.
As far as I know, the end of Lent is the Palm Sunday, the day Jesus entered Jerusalem and was praised and received as the King of Jews. After that Catholic people celebrate Holy Week. These are the seven extra days you have doubts about.

Palm Sunday is the end of Lent and the beginning of Holy Week, which has all itslent why 40 days own observations and stuff, which culminates in Easter Sunday
Those seven days are known as Holy Week. It is in preparation for Christ's rising after crusifiction on Easter. Many people fast from Sunday to Montay Thursday.
Sunday isn't part of the 40 days since it represents the Lord's Day, or day of Resurection. Also, Holy Thursday and through Holy Saturday are not part of the 40 days.
What I dont get is why people give up useless stuff like 拙克力 or video games when jesus was forced to starve.
